Genmaicha is a Japanese green tea made from untoasted bancha tea leaves and puffed and toasted rice. Literally, Genmai cha means 'natural rice tea' and is also known as 'popcorn tea', as during the toasting process some rice grains 'pop' and are commonly found among the tea leaves.

Genmaicha is a tea with a low caffeine content. It has a sweet, caramelized aroma, and is highly recommended to start the day. It is the ideal tea for those who want to approach green tea but find the bitter taste and stomach discomfort of astringent teas unpleasant. History and Origin

Genmaicha is considered in Japan the 'tea of the people', because the addition of puffed rice reduced the price of tea and made it accessible to everyone. The legends and stories about the creation of this tea are diverse: it is said that in the 15th century, a samurai was drinking a cup of tea while studying a battle strategy when his servant named Genmai accidentally spilled rice into his cup. The samurai killed the servant, but repentant, he always drank tea with added rice, which he called Genmaicha.

In reality, it is believed that the Japanese cut the tea with puffed rice to 'stretch it out' and make it last longer, as rice was an inexpensive and common ingredient, unlike tea. Today in Japan, Genmaicha is an extremely popular tea, used to accompany meals, especially breakfast, and has spread worldwide in its various variations, such as Matcha Genmaicha, a Genmaicha with added matcha powder.

It is excellent paired with cheeses, meats, and particularly salty dishes, to contrast them with its sweetness, but it can be enjoyed throughout the day and is also suitable for children.

Genmaicha can also be made with a Sencha base, but Bancha is much more common, and a Bancha Genmaicha respects the original purpose of this tea, which was meant to be economical and accessible: 'cutting' a Sencha with puffed rice would result in a much more expensive Genmaicha.
