RUBY BLACK TAIWAN, TEA MASTER: MR.YAN

This tea was selected during our trip to Taiwan in May 2018.

The 2 days we spent at Ali Shan, on our trip to Taiwan, were very productive; in addition to visiting one of the most beautiful and highest mountains on the island, we found two exceptional suppliers/growers. The first produces a hard-to-find Ali Shan organic, the second is Mr. Yan, also a young grower who is slowly taking over the family fields and experimenting with new things. Like this Ruby black: a black tea, with leaves rolled in the classic shape of Taiwan oolongs. In reality, even though it is classified as a black tea, it has a little of both (compared to its leaf processing stages). So we could say it is a tea that is halfway between black and oolong. A high mountain black tea (Gao Shan) that we liked very much, because it has fresh and delicate notes like only Taiwanese high mountain teas have, but it also has the depth of black tea, all well balanced. Difficult to describe, but definitely worth trying!

  • Cultivar: Jin Shi
  • Altitude: 2000m
  • Oxidation 65%
  • Recommended infusion method: Gong Fu Cha
  • 7-8 infusions
