The Selim pepper is a precious pepper, the fruit of the Xylopia Aethiopica, a plant from the Annonaceae family that grows in tropical Africa between Ghana and Ethiopia. From the trunk of the tree, which can reach up to 15 meters, the fruits grow, green pods that are harvested at the end of summer and then processed by drying. Selim pepper is also known as Negro pepper, Ethiopian pepper, or Kani pepper.
It does not belong to the piper nigrum family, so it is not the classic black/green/white pepper, but it shares with them the slightly pungent, warm, and spicy taste given by the inner seeds. Selim pepper is therefore a similar pepper, and compared to other types of pepper, the selim grains have a more resinous and smoky note with a balsamic shade, given by the outer pod: it actually recalls black cardamom and cubebe pepper. Probably this very particular note that makes Selim pepper a very precious pepper is due to the presence of essential oils such as limonene and 1,8 cineole.
The pods of the Selim grains are used whole, they are not crushed because the most aromatic part is contained right there, they can be roasted in a pan if you want to give an even more pronounced smoky note. They are then put in cooking whole and thus release their aroma.
In the lands of origin of this beautiful plant, they are used in meat recipes (stews and roasts) but also to give a more interesting touch to soups.
In addition to this, Selim pepper in Senegal is mixed with coffee and black tea with which it makes a very interesting pairing given its woody and resinous note.
