Fukamushi Sencha: Fine Japanese Tea

The Fukamushi is a famous Japanese green tea that has gained popularity since the 1960s, processed through a steaming method of the same name, which sometimes lasts for more than two minutes.
This makes the leaves more tender and fragile, to the point of breaking them in the subsequent rolling phase, and although it may look less appealing, the benefits in the cup are numerous:

  • almost absent astringency;
  • it is easier and more immediate to benefit from the leaf's nutrients, which are more abundant due to the prolonged stabilization, such as catechins, antioxidants, and some vitamins.

Origin and Cultivation

The Fukamushi that Terza Luna offers is a Shincha, a Sencha from the first spring harvest of 2023, coming from Kirishima. It is one of the most appreciated loose teas in our tea shop.
This tea, produced by the Nishi family, renowned throughout Japan for excellent quality and dedication to organic cultivation, of which they are pioneers, exhibits all the characteristics of a high-profile tea, thanks to the perfect conditions under which it is produced: the favorable climate of Kirishima, hand-picking, the quality of the cultivars, and the expertise of the Nishi family.

For this year, we have chosen a different cultivar from last year: Asanoka. We liked it more than last year's Asatsuyu, more aromatic and intense, in fact, it was also recommended by the tea farmer.

Color, Aroma, and Taste of the Fine Japanese Infusion

The leaves of this Fukamushi are of an intense emerald green.
The liquor, dense and vivid in color, releases the vegetal scents of seaweed and sea breeze, with a full-bodied and mineral taste, distinctly umami, with a sweet and refreshing finish of gooseberry.

Preparation and Infusion Time of Fukamushi Green Tea

Preparing the fine Japanese green tea is very simple, and all those who wish to enjoy its multiple beneficial effects can easily prepare a good fukamushi sencha. You can start by pouring water into a container and heating it to a temperature between 70 and 80°C. Once the temperature is reached, you can add 3g of fukamushi sencha.
The infusion time for the fukamushi green tea is about 1-2 minutes.
Many also recommend it for Cold Brew.
