The wild Madagascar pepper, also known simply as wild pepper, is one of the rarest and most unique peppers. Also called Voatsiperifery pepper, it originates from Madagascar and belongs to the piperaceae family, unlike pink pepper or Sichuan pepper which are part of the classic black pepper family. Madagascar pepper is considered a gourmet pepper and is very rare because it cannot be cultivated, but only grows wild in the tropical forests in the south of the country, and its harvest is exclusively manual.
The most delicious and precious berries of Madagascar pepper are the youngest ones: Voatsiperifery wild pepper is a climbing vine that grows on other trees feeding on their sap and only bears fruit in the youngest parts of the plant, which are the highest and grow up to 15 meters in height, making the harvest complicated. The grains are regular, with a reddish-brown color.
The high cost of Madagascar pepper is justified by the difficulty of the harvest, which is entirely manual, the limited production (about 500 kg of Voatsiperifery pepper per year), and the fact that it cannot be cultivated, but only grows wild in Madagascar. For a long time, Madagascar pepper remained confined within local borders, but today, the populations in the south of Madagascar have organized for export, although production remains very limited.
Madagascar pepper, or Voatsiperifery, is a surprising spice with an intense taste and aroma, slightly spicy, deeper than classic pepper. It has delicate notes, not too strong, reminiscent of the forest, citrus, and a balsamic hint with hints of resin, precious woods, leather, and moss that give dishes a warm and woody flavor. It is certainly not as strong as black or white pepper, but it still maintains a well-defined personality. The taste of Voatsiperifery pepper recalls citrus fruits, touches on forest notes, giving us a fairly complex bouquet with very interesting hints.
How do you use Madagascar pepper? Being a very rare and precious pepper, it is good to know the correct pairings to fully appreciate its aromas. Piper borbonense or Voatsiperifery can be used on fish and meat dishes: the grains can be crushed by hand, no need for a grinder. Flavored oils can be created by macerating about twenty grams in olive oil. When crushed and emulsified, excellent sauces can be created to dress salads and vegetables.
In general, wild pepper pairs well with red meats and grilled meat, the main use in Madagascar, but also on vegetables, especially grilled mushrooms and asparagus.
As always, experimentation in the kitchen brings the greatest joys and surprises. Especially when it comes to a not too invasive spice, you can dare to use it in many dishes. Definitely fish and meat, but also sweets, as it pairs very well with wild fruits and chocolate.
