Shui Xian is one of the most renowned rock teas or Yan-Cha.

It comes from the Wuyi mountains area, famous for giving birth to equally famous teas like Da Hong Pao and others.

The prefix Zheng Yan (正岩) is given only to teas grown in the most protected area of ​​the Wuyi Mountains, a UNESCO World Heritage Site, and is often synonymous with high quality as this is the area where these cultivars perform at their best.

These plants sink their roots into the rock, which contributes to giving the infusions a taste with a mineral shade. The processing the leaves receive is very elaborate and expensive, thanks to the accuracy of these processes the tea takes on fantastic, delicate and floral characteristics at the same time. The name Shui Xian actually means Narcissus, and indeed its notes are very reminiscent of flowers like orchids and daffodils.
