Tellicherry Black Pepper

The Tellicherry pepper is considered the king of peppers: a precious pepper, with a hot, woody, and intoxicating flavor, very spicy. It is a black pepper, obtained from the plant Piper nigrum, belonging to the family Piperaceae: the fruits are brown berries, quite large (5 mm in diameter), harvested before ripening (about 9 months after the plant blooms) and then dried at moderate temperatures, in order to dry the green cuticle covering them.

The Tellicherry pepper is originally from India, specifically cultivated and harvested exclusively in the region of Thalassery, in the state of Kerala, southwest of the country, near the homonymous port city on the Malabar coast. This region is the birthplace of black pepper, which in ancient times was considered an extremely precious spice, of high quality, and is now widely used worldwide.

Aroma and Flavor

The Tellicherry pepper is a pepper for true connoisseurs, with a characteristic, strong, and spicy flavor and aroma, different from other black peppers. Tellicherry has larger berries compared to classic black pepper and contains an essential oil with prominent aromaticity in which the active ingredient, piperine, is found, which determines its higher spiciness compared to other peppers, and is very persistent in the mouth. The aroma is pungent and intense, and the flavor hides a hint of lemon.

How to Use Tellicherry Pepper?

The uses of Tellicherry pepper in cooking are varied. Its strong and spicy flavor makes it an excellent ingredient for many dishes, and it can be used instead of regular black pepper to give a more characteristic and exotic touch to classic recipes.

To use Tellicherry black pepper in cooking, you can grind it with a pepper mill, crush it in a mortar, or use it whole, depending on what the recipe requires. It can be ground at the end of cooking because, like other types of pepper, it should not be heated for a long time, while if you want to use it in longer cooking times, you can infuse it (as in the case of stews, stews, or soups) in an infuser in the last ten minutes of cooking.

Tellicherry pepper pairs very well with meats: it can be used to flavor fillets, or ground on tartare, grilled red meats, chicken, but also hard and soft cheeses, Parmesan or goat cheeses, and tomato-based sauces. Also, try to give a characteristic touch to salads and fruit carpaccio.

It is recommended to coarsely grind it, or crush it shortly before use, and use it sparingly.

How to Store Tellicherry Pepper?

Tellicherry black pepper should be stored at room temperature, in a dry, cool, and preferably dark place, in an airtight container.
