It is a "cultivar" discovered by Frank Garcia in 1989, in California, while walking in a field of orange Habanero, another chili pepper cultivar. Garcia noticed the difference in the fruits of this plant and named it after his mother "Savina".
The Habanero Red Savina chili pepper has a very spicy and intense flavor, with a hint of bell pepper, and was, until 2007, the hottest chili pepper, listed in the Guinness World Records since 1994. It was then surpassed by the Bhut Jolokia, which measures 1,001,304 SHU (Scoville Heat Units), compared to the 577,000 of the Red Savina Habanero.
The Habanero Red Savina chili pepper was long considered the hottest chili pepper, entering the Guinness World Records in 1994 with a measurement of 577,000 SHU, until 2007, when it was surpassed by the Bhut Jolokia chili pepper. The Guinness World Records measurement has never been reached again, subsequent measurements have always reported a lower level of spiciness for the Habanero Red Savina, around 250,000 SHU. It is believed that the spiciness of the Habanero Red Savina in the Guinness World Records was due to specific care received by that plant. There are indeed other chili peppers, like the Habanero Orange, that are spicier than the Red Savina. The current spiciness record is held by the Carolina Reaper, a chili pepper from the same family but created through genetic crosses.
