SHUI XIAN ZHANG PING

The Shui Xian Zhang Ping oolong tea is truly unique, very different from the more well-known Shui Xian with which it shares the cultivar name but otherwise they differ in both taste and form.
It comes from the south of Fujian in the Zhang Ping area. Here, expert tea farmers use the Shui Xian cultivar from which they harvest the most resistant leaves that are slightly withered in the shade before being shaken to gently break the fibers. 
The process continues with special attention until pressing into square bricks that help preserve the incredible aroma of this tea, which you will perceive as soon as you open the package!

The Shui Xian Zhang Ping oolong presents notes ranging from flowers like orchid and wisteria with a creamy background always present. Unlike other lightly oxidized oolongs, it has a fuller body and mouthfeel.

PREPARATION OF OOLONG TEA

Like all oolongs, Shui Xian Zhang Ping can be prepared in the Western style or following gong fu cha. The advice is to try both to experiment and draw your own conclusions to refine your palate.
 

  1. Western style preparation
    -Break the brick into 3 parts and put 1/3 in a cup or teapot
    -Pour 90°C water over it 
    -Steep for 2-3 minutes
    -Strain, optionally repeat the process 2-3 times
  2. Gong Fu Cha preparation
    -Heat teapots and cups
    -Break the brick into 2 and place it in the teapot (max 300 ml) 
    -Infuse in 90°C water
    -Infusion of 60 seconds
    -Multiple infusions until the leaves are exhausted

This tea is sold per piece. Each brick is individually packaged and weighs 10g.
