Peel the lemon and remove the white part from the peels. The peels must be further cut into Julienne. Peel the onion and finely chop 1/4 of it. In a saucepan, heat a little oil with the onion until golden brown and add the rice, toasting it. Stir for a couple of minutes. Deglaze with white wine, stir a little more and then add the broth. Proceed with the cooking as for classic risotto.
