DONG DING OOLONG

Oxidized Oolong at 25%. Nantou Province, Tung Ting Mountain, Taiwan.

Dong Ding oolong, also known as Tung Ting oolong, is a 15% oxidized tea from Nantou Province, Taiwan.

Grown between 800 and 1000 meters.

Like many oolongs, it was imported from China about 150 years ago, specifically from the Wuyi Mountains where excellent rock teas come from.
Dong Ding has a main difference from other 15% oxidized teas in Taiwan: once the numerous processing stages are completed, it undergoes a light leaf toasting process (charcoal roasted) which gives the infusion a note of amber taste between fruit and honey.

The result is a very pleasant tea, where the classic notes of Gao Shan, high mountain teas from Taiwan, are accompanied by an aftertaste of honey and toasted flavor. Like other Taiwanese oolong teas available online at the Terza Luna tea shop, Dong Ding is harvested during spring, considered the best time of year for this type of tea.
