The Matcha is a high-quality tea harvested in the Japanese prefecture of Aichi. This variety of organic Matcha green tea was harvested in May 2021 and is therefore very fresh, allowing you to taste all its flavors and aromas.

The organic Third Moon Matcha tea is a powdered green tea, iconic in the history and culture of the Land of the Rising Sun. Nishio, a town located in the prefecture of Aichi, is home to one of the best matcha on the Japanese market: the plantations, immersed in a harmoniously tranquil setting, receive nourishment from the Yahagigawa river, which, combined with the mild climate, makes the terroir composition unique.

Obtained through the artisanal processing of matcha, which involves shading the leaves 2-3 weeks before harvesting. A delicate processing of the leaves that includes steam stabilization and grinding them in stone mills at very low speeds for over 24 hours.

In the weeks leading up to the harvest, the fields are shielded: it is in the absence of light that the leaves, fearless, produce higher levels of chlorophyll and amino acids to survive. When the spring season arrives, the buds and the first leaves are harvested and steamed at high temperatures and, unlike other teas, they are not rolled to prevent the release of essential oils. After the slow drying process, they are called Aracha and, in order to become Tencha, the only type used in matcha production, the veins must be removed. Finally, a slow grinding between granite blocks turns them into a bright green, fine, and velvety powder. Quality goes beyond just visual and sensory aspects: safety is a key factor in the production of this matcha, as the processing takes place in sterile rooms with controlled temperature and humidity.

HOW TO PREPARE MATCHA? Check out the video we made below!

The Matcha tea is not difficult to prepare. To recreate a small matcha tea ceremony (Cha No you) at home, you just need some basic accessories: take a look at our Matcha Set. You will need:

  • A very large cup (Chawan)
  • A whisk for Matcha, (Chasen)
  • Other less essential items are the chashaku (spoon for taking Matcha) and the stand where the Chasen is placed.
  1. Prepare water at a maximum temperature of 65°C
  2. Pour just two fingers of water into the cup
  3. Add the Matcha: just a tip of chasaku is enough
  4. Start emulsifying the Matcha with the two fingers of water, eliminating lumps and creating a smooth paste
  5. Pour the rest of the water
  6. Most important and final step: with the Chasen, you must draw an M in the cup, shaking quickly and creating foam. The goal is to evenly emulsify the Matcha in the water and not leave any at the bottom
