The licorice root is the most used part of the licorice plant, Glycyrrhiza glabra. The term Glycyrrhiza means 'sweet root', and the glabra species is the most common variety of this plant, which grows wild in many areas of the Mediterranean Europe and Asia. The licorice plant belongs to the legume family, and its roots, the part that is used for consumption, extend up to two meters. When the plant is 2-3 years old, the roots are harvested, dried, and peeled from their brown woody bark, leaving the fibrous yellow inner part that can be chewed to taste its flavor, or boiled for a long time to extract the famous dark-colored extract used for making sweets, the famous black licorice candies.
Licorice root has a very sweet and balsamic taste, reminiscent of anise and fennel. If chewed for a long time, the root will then take on a more bitter taste. Thanks to its flavor, licorice root is used to quit smoking and to soothe throat irritations caused by smoking.
