How to Prepare Chai Tea?

For the preparation of chai tea (also known as chai latte by some), it is necessary to crush all the spices, preferably in a mortar and pestle. If you don't have a mortar and pestle, you can put them in a plastic bag and crush them with a rolling pin or mallet. Then add the cloves, cardamom seeds, cinnamon, pepper, pimento, and grind them into a fine powder. If the ginger is fresh, add it directly to the pot. You can also add other spices if they suit your taste better: there are many spices used in chai tea variations that differ from the traditional recipe, which instead always includes cloves, pepper, and cardamom. You can, for example, add nutmeg, cubeb pepper, fennel seeds, licorice root, star anise, and much more.

Procedure:

  • Put the spice mixture for chai tea in a saucepan or pot, add the tea leaves and ginger, and heat and toast over medium heat, stirring constantly to prevent the spices from burning. This will allow the flavors and aromas to develop and blend.
  • Add water to the pot and bring to a boil. Let it simmer, then add the milk and sugar. Continue stirring, cooking for another 5 minutes over medium heat to prevent the milk from burning.
  • You can then turn off the heat, strain, and pour into a cup. You will have obtained a perfect cup of chai tea.
  • The proportions can be varied as desired, as well as the amount of sugar: in India, for example, it is tradition for chai tea to be very sweet, so much sugar or honey is added.
