Discover together the new fresh teas of the 2019 harvest!

Between May and June we are always very busy with the many tastings of the samples that come to us from our trusted tea producers.

It is not guaranteed that the teas that were good last year will be good the following year. Many aspects can change: a concept that applies to wine, oil, and also to tea. We have learned this from our travels, from the many tea masters we have met.

Some teas from the 2019 harvest are already available in the store and in the online shop.

New Darjeeling 2019: Monteviot ORGANIC and Jungpana

The first to arrive are always the Darjeeling teas: this year we have confirmed the Monteviot ORGANIC, which has always been of excellent quality, and we have acquired another garden: Jungpana. Famous for its "muscatel" second flush, but this year's first flush is truly remarkable.

The Darjeeling teas are always a bit atypical. They are called black teas, but in reality, just by looking at their leaves, you can tell that something is not right. The leaves have a color halfway between green and black. This tells us that the oxidation is very low.

Therefore, to get the best out of the leaves of a good Darjeeling, we recommend preparing them as if they were green teas:

  • Water at 80°C
  • 2-3 minutes of infusion

Do not let them become too bitter otherwise you won't be able to appreciate the floral and grape notes that make them so special.

There are no teas in the world that can be compared to the taste of Darjeeling teas. Why?? Hard to say.

There are many factors and the growers keep a tight control over the processing of the leaves. When we were in Darjeeling 3 years ago, to enter many plantations we had to even have an invitation. But even with that - and we had them - they certainly didn't reveal their secrets to us!

New Chinese Tea harvested in 2019: Pai Mu Tan ORGANIC

In addition to the two Indian Darjeeling teas, we already have the first Chinese tea of 2019. The white tea Pai Mu Tan ORGANIC. Here too, we are very satisfied with the quality this year. Truly one of the best ever, with a delicate but not bland taste. A well-balanced note between green and white tea, with truly remarkable sweet notes. One of the few Chinese teas with organic certification!

Low caffeine content, high presence of antioxidants. An exceptional white tea. Easy to prepare because it rarely becomes bitter. Remember not to infuse it in too hot water.

Here is how we recommend preparing it at your home:

  • Water not too hot, 70°C - 80°C
  • Infusion time 3-4 minutes

We always invite you to experiment and play with the leaves: the only true way to become a bit more expert. Have fun preparing the same quantity but first with 2 minutes, then 3, and then 4 minutes of infusion. Always use water with low fixed residue and not boiling: 70°C-80°C.
