June, high temperatures, unbearable heat, what better way to quench your thirst? Try our Kombu-fizz, a twist on the classic Gin Fizz cocktail with a completely new ingredient: Kombucha. This ginger fermented tea will provide the drink with a touch of freshness, liveliness that pairs well with fruit and vegetable-based appetizers.
Technique: Shake and strain
Cold maceration for 24 hours with 200 ml of water, 10 red rose buds, 1 cardamom, 1 bar-spoon of ginger in tea cut, 1 bar-spoon of fennel seeds. After 24 hours, add an equal weight of white sugar to the flavored water and mix until completely dissolved.
