Japan does not only produce green teas, as many think. It also produces some oolong and some black tea. Both are difficult to find, especially in the European market, but absolutely interesting for the taste that their infusion develops. During our recent trips in search of new teas to offer you, we were fascinated by two teas in particular: The organic Yakushima black tea and the organic Kawanabe. As soon as we tried these two incredible Japanese black teas, we understood that they had to become part of the selection of rare teas from Terza Luna. Their taste is more delicate and fruity than regular black teas, something that you have hardly tried before. (P. S. have you ever wondered what is the correct way to write tea in Italian? These peculiarities are due to various reasons:
The Kawanabe black tea comes from the province of the same name located at the southern tip of the Japanese island. Its infusion has a fruity note that is between peach and grape, with floral hints like jasmine. The Yakushima black tea has a golden color in the cup and is more floral than the first, slightly more delicate. It comes from a small island south of Kagoshima, declared a UNESCO World Heritage Site. The Fujiwara family cultivates this tea in a mix of tradition and innovation, having obtained all the organic certifications. Both Japanese black teas are organic and both harvested in May 2016.
For the preparation of these rare teas we definitely recommend low fixed residue water (like Sant'anna or even better Lauretana), start trying infusions from 2 minutes with 2g of leaves. If you find it too delicate, increase the infusion time to 3 and then 4 minutes. Choose the time that best suits your taste. Try not to make the liquid too bitter because you would lose the more floral notes of these incredible Japanese black teas. Remember that while you drink, you should simultaneously inhale a little air (as done in wine and oil tastings), it will help you perceive the nuances much more intensely.
